Recipe: fire-roasted peppers, my new favorite

This is so fun and easy.  At a local grocery/ veggie dealer (the 320 for the Rockford locals),  I came across a big bunch of variety peppers.  

Slice them into large slices (about an inch across) and add a big red onion--loosely chopped also.  

Toss them in a big bowl with olive oil and coarse salt. 

 Grill on HIGH heat in a vegetable griller.  These are WONDERFUL.  If you don't eat them all right away, they make great accompaniments to almost anything.  

Incidentally, I think the red ones are the sweetest!
