Monday night dinner..
DH and I left the Y at 6:30 p.m. The storm clouds were looming and the wind was picking up. It wasn't supposed to be THIS dark in August. We checked the weather radio station on our 2 meter (ham radio). Sure enough--tornado warning. "Rotation spotted". We quickly called home and made storm preparations. In the meantime, I was planning to make some sort of soup for dinner, but I knew I'd be fighting power outages.
I quickly threw these ingredients in the pot and tried to come up with a fast dinner.
Browned: 1 package of taco flavored turkey sausage with an onion
Added: fresh corn cut off the cob, red pepper diced
Added leftover (already cooked): brown rice, kidney beans
Added: canned: tomatoes and green chili mix (Rotel) + tomato sauce + chicken broth + water+ salt
Heat thoroughly. Served with cheese and sour cream.
A hit. Would be good with tortilla chips, if we had them.

Sounds yummy! We had 15-bean soup last night ourselves, with lots of the same ingredients! Good stuff.
Hey, your Blueberry Buffalo is already gone at our house. Didn't last 24 hours! (Of course, I added a cup of sugar to your version of the recipe...maybe that's why it went down so fast?)

Taco-flavored TURKEY sausage: If you have a store that carries fresh ground turkey, sometimes they will have the Italian or taco flavored version. It's not in a tube; it's in the styrofoam container "purdue" brand?

Kathi, an extra CUP of sugar?? good night, girl. Will told me to decrease the sugar, since he said it was too sweet. Ours doesn't collect mold on it either--24 hours tops.

Wow tornadoes. That seems so foreign to hear. I would freak. I guess you get used to it living with them.
Sometimes those 'throw together' meals turn up the best recipes! Sounds like a winner.
