This is my attempt to get veggies into those "picky eaters", and it worked!! You have to try the swamp dish.
You can cut everything in half. I'm always feeding a large group.
Just the ingredients:
4 cups elbow macaroni
4 cups raw veggies
2 cups raw spinach
1/4 cup (1/2 stick) butter
1/4 flour
salt, pepper, chicken bouillon paste or other chicken flavor
2 1/2 cups milk
extras: ground beef, cheese,
The procedure:
4 cups of macaroni (dry)--cook and set aside
4 cups of of fresh, raw veggies (broccoli, cauliflower, zucchini, carrots)
Steam the veggies until they are soft 2-3 minutes
Drain the veggies and add 1/2 stick of butter in pan
Saute the veggies in the butter with: 1 t. salt, 1/2 t. pepper, 1 T better than chicken boullion (makes sure it tastes good!)
When the butter is melted, add 1/4 flour to make a roux. (Basically, a paste of flour and butter)
Slowly add the 2 1/2 cups of milk. You want the mixture to thicken.
Add 2 big handfulls of green leaf spinach at the end.
Place all of this thickened mixture (hot) in the food processor. Whirl around. You'll have a thick green sauce.
Toss over the pasta. Impossible for little hands to pick out anything!!
Smother with: cook ground beef, cheese, bacon bits, etc. or just eat as is! Yummy!
Huge veggie servings!!

For all my mom's readers: it didn't taste that bad. And mommy, is this your way of "going Green"?
We make something similar that my children named "Green Spaghetti." It is similar to Spinach/Artichoke dip.
2 jars Alfredo Sauce
1 can evaporated milk
1/2 can drained Spinach
1/2 can chopped artichokes
Diced roasted Tomatoes
2 cups chopped chicken (if desired)
can of mushroom slices
Onion, garlic, pepper as desired
Serve over whole-wheat pasta.
They beg for this weekly and prefer it to tomato sauce spaghetti.
